Number of Servings: 4

Ingredients

    Water, tap, 2.25 cup
    Beef broth - 1 cup
    Rice Vinegar, 1/3 cup
    Kikkoman Lite Soy Sauce, 1/3 cup
    Brown Sugar, 1 tbsp
    Veggie Oil, 1 tbsp
    1 lb. beef stew meat
    1 1/4 cup choppped green onions
    Garlic, 2 clove
    Ginger Root, 1 tsp chopped
    *Bok Choy - sliced - 3 cups
    Carrots, raw, 1.5 cup, sliced thin
    Rice Noodles, 2 cups

Directions

4 servings - 1 1/2 cups mixture & 1/2 cup noodles

* Combine first 6 ingredients and whisk - set aside
* Heat oil in pan and brown meat - add garlic & ginger for the last few minutes.
* Add broth mixture and green onions
* Bring to a boil, and then simmer for 1 1/2 hours - till meat is tender.
* Stir in bok choy and carrot - cook for another 5 minutes.
* Serve over cooked rice noodles.

    I love this! It's kind of like an Asian beef stew. I throw my carrots in pretty early on because I like them soft. I could probably eat this at least once a week, and it's really pretty inexpensive. Thanks for sharing - one of new favorite meals! - 8/4/12

    This was very tasty. I too added chili garlic sauce for some spice. I also added onion. I did not have brown sugar so I used honey, and I added white onion when i cooked the meat and added some cabbage to the soup. I put a splash of lime juice at the end and served mine over brown rice. - 2/29/12

    This was great! I added some chili paste to spice it up and about 5 cups of bok choy - we have leftovers for tomorrow so it was 6 servings total. Thanks for sharing! - 2/15/11
