Garlic Bean Soup

Ingredients
1 lb white beans (navy, cannellini, etc), soaked1 large onion, chopped8 or more cloves of garlic, mincedbroth or water3 tbsp. olive oil
Directions
Cook the beans, onions and garlic until the beans are soft. Puree (roughly) with food processor or blender, Season to taste with salt and pepper.Drizzle olive oil over soup. This seems so simple and it is, yet it is a lovely warm comfort food to serve with some nice bread on a cold day.
