Sweet Potato, Mashed

3 Jumbo potatoes2 Tbsp. butter1/4 cup skim milkSalt
Peel and slice sweet potatoes into even sized wedges.
Fill large pot with water. Add salt. Bring to boil.
Add potatoes. Boil for 20 minutes.
Drain in colander. Let dry as much as possible.
Keep pot on medium heat once drained and place potatoes back in pan. Allow water to evaporate for a few minutes.
Add butter and milk.
Whip on low with mixer. Then turn mixer up to medium high speed. Whip until light and smooth.
