Lemon Pasta with Garlic and Edamame

Ingredients
2 Cloves garlic, minced1/2 tsp Olive Oil1/4 tsp dry thymeZest of half a lemonjuice of 1 lemon1 Serving Barilla Plus! Rotini1/2 C soy milk1/2 C shelled Edamame1/2 C chicken broth1/2 Tbsp cornstarch
Directions
1. Bring salted water to a boil in a pot and add Barilla Plus! pasta.
2. In a skillet over medium heat, saute garlic and lemon zest in olive oil for about 1 minute, or until fragrant. Add thyme, stir for an additional 30 seconds.
3. Add soy milk and chicken broth and bring to a boil. Reduce to a little more than half. Add edamame and heat through.
4. Dissolve cornstarch in Lemon juice. Add to sauce and stir until thickened. Taste to adjust salt and pepper.
5. Drain pasta and toss with sauce.
