Fast Ground Turkey Chili with Beans and Tomatoes

Ingredients
1 tablespoons extra-virgin olive oil1 pound ground turkey (or lean ground beef)Half an onion, chopped2 cloves garlic, finely chopped1 tablespoon chili powder1 teaspoon ground cumin1 15 ounce can black beans1 15 ounce can pinto beans1 15 ounce can tomatoes with green chiliesSalt and pepper1 cup grated low fat Mexican cheese (or pepper jack cheese)
Directions
1. Heat the olive oil in a large frying pan over medium high heat. Add the turkey (or beef) and cook for 7 minutes.
2. Drain the turkey. Add the onion, garlic, chili powder and cumin and cook over medium-low for a further 5 minutes. Add the beans and tomatoes with their liquid. Bring to a simmer. Cook, stirring occasionally, about 20 minutes.
3. Season with salt and pepper.
4. Finally, stir in the cheese until it melts.
