Ingredients
1 cup cooked or canned pumpkin1 cup sugar1/4 cup canola oil1/4 cup nonfat plain yogurt1 egg2 cups whole wheat pastry flour2 tsp baking powder1 tsp ground cinnamon1/2 tsp salt1 tsp baking soda dissolved in 1 tsp milk1 tsp vanilla1 cup (224 grams) semi-sweet chocolate chips
Directions
Preheat oven to 375 degrees F. Combine pumpkin, sugar, oil, yogurt, and egg. In separate bowl, stir together flour, baking powder, cinnamon, and salt. Add to pumpkin mixture along with dissolved soda and mix well. Stir in chocolate chips and vanilla. Drop by spoonfuls on cookie sheet. Bake for 10 minutes.

Makes 38 3-inch cookies.
