Yvonne's Black Bean Burger (DF)

Ingredients
1 16oz bag of black beans (cook them then mash them)2 T chopped or minced garlic1/2 t dried oregano1 T olive oil1/2 Red bell pepper1 11 ounce can of corn and bell pepper1/4 t cumin1/2 t sea salt2 t chili powder2 T dried parsley
Directions
Cook and mash the black beans - mixer works well for this.
In a skillet, heat olive oil and add all the ingredients EXCEPT beans. Saute till onions are translucent.
Add to the black beans and stir well.
Patty the burgers using almost 1/3 cup for each burger (makes 12 burgers).
Place them in skillet LIGHTLY oiled for 5 minutes each side.
They also heat well in the oven - on a sprayed cookie sheet. 350 for 10-15 minutes do not over bake or they will dry out.

Serve hot

***can freeze them - cook them and let them cool then just put wax paper between each one so they don't stick to each other.

serves well with cheese and pickle or guacamole and salsa
