Homemade Bratkartoffeln

4 to 6 red potatoes, 1 cup chopped onions, 3 tbsp olive oil, 6 pieces cooked bacon (any brand), or 3 sausage links (any brand), 3 large eggs (Eggland works well), 1 dash of salt for taste.
1. Boil the potatoes until soft.
2. Fry the onions and bacon together in the olive oil in a large frying pan until onions are transluscent. OR Fry bacon separately and drain, adding with step 3.
3. Add potatoes and then eggs.
4. Cook until eggs are thoroughly cooked and serve.
Good for breakfast, brunch, lunch, or dinner.
Serves 4.
