-4 large eggs-milk 1% 1/2 cup-yukon gold potatoes 5 small (boiled and sliced)-1 cup brocoli florets steamed-onions sliced-olive oil-any combo of dried herbs you prefer (i use herbs d'provence)-salt and pepper
-heat oil in cast iron pan
-add sliced potatoes- let it crisp for 1 minute
-add onions and toss until translucent
-add seasonings to taste
-let potatoes brown to desired crispness
-separate bowl scramble eggs and milk with salt and pepper
-chop brocoli florets and add to pan
-pour egg mixture and let it sit for 5 minutes on medium/high heat
-cover and reduce heat to low for another 5 minutes
-turn off heat and let it sit for another 5 minutes
-place large flat plate over pan and turn upside down
-viola! cut into four servings and enjoy!
