Curried Eggs

Ingredients
3/4 c. eggbeaters or other egg substitute (or you can use three fresh medium/large eggs)1 nonstick pan sprayed with olive oil1 tablespoon (more or less depending on your taste buds)
Directions
Spray pan and heat. When hot, add well-beaten eggs. Scramble or allow to puff/cook like an omelet. Just before it is done - sprinkle with the curry powder.

Slide onto your plate.

Serve with one serving of whole wheat toast, and 1 serving of fruit for a complete breakfast.
