Pumpkin Muffins

Ingredients
2/3 cup white flour2/3 cup whole wheat flour2/3 cup splenda3/4 cup raisins3 teaspoons baking powder1 teaspoon baking soda1 teaspoon salt2 cups canned pumpkin2 eggs1/2 cup orange juice2 teaspoons pumpkin pie spice1 teaspoon vanilla extract4 tablespoons chopped walnuts
Directions
Spray a cupcake pan with baking spray and lightly sprinkle with flour. Combine first 4 ingredients in large bowl. In medium bowl whisk together rest of ingredients except for walnuts. Stir wet ingredients into dry with wooden spoon until just combined. (Do not over mix) Spoon into cups, filling each about 2/3 of the way. Sprinkle with the walnuts. Bake 25-30 minutes until a toothpick comes out clean. Serve warm. Makes 12 small muffins.
