Chicken Breast, no skin, 16 ounces *Bear Creek Mango Lime Salsa, 16 oz Onions, raw, 2 mediumCheddar Cheese, .75 cup, shreddedVita's Low Carb Tortilla, 7" Whole Wheat Low Carb Tortilla, 6 serving*Vegetable Oil, 1 tbsp *Fajita Seasoning Mix 1 packet
Grill chicken breast til it is no longer pink. Also brown diced onions. Add fajita seasoning and 3/4 of the salsa. Use vegetable oil to prevent items from sticking. When everything is brown scoop out mixture into tortilla, add cheese, roll into 'tube', place in 9x15 pan. Repeat for all 6 tortillas. You may want to lightly grease the pan to prevent rolls from sticking. Spread out remaining mixture, salsa, and cheese on top. Bake at 350 degrees for 15 minutes.
