Nancy's crustless quiche

3 or 4 whole lg eggs4 egg whites1 can of cream of something soup (i.e. mushroom, chicken, celery, etc.) I use the low sodium kind. 1 1/2 cups of steamed veggies suggested: broccli, thinly sliced carrots, asparagus, spinich1/2 cup combined of (here again you can use one or more of these suggestions): fresh tomatoes, red pepper, onion, green pepper diced, mushrooms sliced, green onions, etc. 1/2 cup of low fat shredded cheese (mozzarella, chedder, or pepper jack if you like a little spice). Salt and Pepper, minced garlic (optional)Meat optional: 1/2 cup cooked bacon crumpled, or cooked breakfast sausage, deli turkey, deli ham cut in small piecesOptional: premade pie crust if desired. However, its great without the crust and keeps the calorie count down.
PreHeat oven to 350
Cut up veggies and cook/steam in microwave until slightly tender (about 3-4 minutes, let stand covered for 3 minutes)
Combine eggs and can of cream soup in mixing bowl. Mix throughly so that both are well blended.
Add cooked veggies and other desired inqredients (tomatoes, peppers, mushroom, etc.)
Add shredded cheese and mix
Dash of salt, pepper and minced garlic if desired
Prepare a 9 inch round glass pyrex pie plate with a cooking spray and pour the prepared mixture into the pan.
Cook at 350 for 50 - 60 minutes. Quiche should be completely raised in the center and slighly brown on the edges. Serve hot with sliced fruit, berries or grapes on the side.
