Ingredients

1 cup fresh organic spinach leaves
1 cup sliced green or yellow summer squash
1 can delmonte diced tomatoes no salt added
1 tsp minced garlic
1/2 cup diced or sliced onions
1 medium red potato (about 3 1/2 ounces) chopped
Directions

Begin by adding the minced garlic to a metal skillet over medium heat, Saute the garlic and the onions for about 3-4 minutes. Then add in the potatoes, squash, and tomatoes. Bring to a boil and then immediately reduce heat to medium. Then add the fresh spinach leaves to the top and cover. Pepper to taste. Stir occasionally. If you like it spicy, sprinkle a bit of Cheyenne Pepper over it and stir. This is great as as side, as a pasta sauce, or with chicken or turkey.
