Potato Pancakes

Ingredients
Red Potato, 454 grams or 1 lb. gratedOnions, raw, 1 small*Flour, white, .25 cupEgg substitute, liquid (Egg Beaters), .25 cup Salt, .5 tspPepper, black, .125 tspOlive Oil, .25 cup
Directions
In a small bowl, combine first 6 ingredients until blended. Heat oil in fry pan. Scoop a heaping tablespoon of batter into oil. Continually turn over until they are brown on both sides and potatoes are cooked. Remove from pan and place on dish. Repeat with remaining until all the batter is used. Top with sour cream or pork & beans.
Makes 10 to 14 pancakes
