Quick Veggie Tacos

Ingredients
2 C black beans4 small wholegrain tortillas8 tbsp salsa1 C chopped onion6 tbsp cilantro1 large chopped tomato1/2 C light sour cream1.5 C frozen corn1 tbsp EVOO2 C chopped broccolini
Directions
Brown onions in oil for 2 minutes or so and add chopped tomatoes, corn, beans, and chopped broccolini. Continue to cook for 5 minutes. Tortillas can be warmed in oven
(350 degrees) while vegetables are cooked . Place cooked filling on each of the 4 tortillas; sprinkle cilantro on each and top with sour cream and salsa. Finally, divide and sprinkle the mozzarella on top of each serving and enjoy.
