I.25 lb. cubed top sirloin1 cup diced onion1 cup carrots, sliced4 large white potatoes, peeled and diced2 cups chopped cabbage1.5 cups frozen corn64 oz V8 juice2 - 26 oz Swanson beef stock4 tubs Knorr Homestyle Beef Stock concentrate28 oz. can crushed tomatoes
Brown top sirloin in bottom of stock pot with onions, carrots, and diced potatoes; do not drain. Once beef is cooked through, add the remaining ingredients. Allow to boil, stirring occassionally, until potatoes and carrots are fork tender, usually about 45 minutes. Season to taste. Makes approx. 16 - 1.5 cup servings
