Fiber Rich Muffins

Ingredients
Hogsdon Mills Multi Grain Hot Cereal, 1 cupflour, unbleached all-purpose, 1 cupBaking Powder, 1 TbspBaking Soda, 1/2 tspSalt, 1/2 tspsugar, I used turbinado, 1/2 cupCarrots, raw, 1 cup, gratedApples, fresh, 1 cup, peeled & choppedmilk, I used 8th Continent Original Soy Milk, 1/2 cupEgg, fresh, 2 largeCrisco Pure Vegetable Oil, 1/4 cupVanilla Extract, 1 tspPecans, 1/2 cup, chopped
Directions
Preheat Oven to 400ºF

Line 12 muffin cups w/paper liners or grease muffin cups. (I used liners)

Blend together dry ingredients.

Add remaining ingredients and mix until blended with a fork.
Batter will be THICK.

Spoon into muffin cups. I filled them full, so used all of the batter. They don't rise all that much, so doing it that way must have been the way I was supposed to :)

Bake 20-22 minutes or until golden brown.
