Arroz Caldo

Ingredients
6 boneless skinless chicken breasts cubed32 oz chicken broth (low sodium)1 c chopped onion2 T 1/4 inch diced fresh ginger2 T minced garlic2 c rice2 T fish saucezest and juice of one lemon
Directions
Add olive oil to dutch oven. Heat over medium high and add cubed chicken thigh. Cook until well browned. Add onion and ginger, cook about 8-10 minutes until union is translucent. Add garlic and cook 1 minute longer. Add rice and broth. Bring to boil, then cover and reduce heat to simmer. Stir often and if it gets too thick add some water. Just before serving stir in lemon juice and zest of one lemon.
