Lemon Icebox Dessert

Ingredients
1 12 oz. can evaporated milk, fat-free, cold1 pkg. graham crackers, rolled to fine crumbs3/4 cup sugar2 large lemons, rind grated and juiced
Directions
Makes 8 servings
Whip milk till stiff; add sugar gradually, continuing to whip after each addition. Add lemon juice and grated lemon rind. Butter Pyrex dish (glass pie plate or other similar dish) and cover with half of the graham cracker crumbs. Pour in filling; add remaining half graham cracker crumbs on top. Cover with foil and put in freezer at least 3 hours or overnight. Slice and serve right from freezer.
