Terri's Hot Curry

Ingredients
* Mushrooms, fresh, 680 grams * Carrots, raw, 1 cup, chopped * Curry powder, 1 tbsp * Apples, fresh, 1 cup, quartered or chopped
Directions
Put one cup of water into a sauce pan and add spices. I add both hot and sweet curry, onion powder, garlic powder and lots of red pepper flakes.

Add mushrooms and chopped carrots until they cook down. Add the apple for a bit of sweetness and then make a slurry with corn starch and cold water. Add to mixture and cook for a few minutes until it thickens.

I serve this over 100 grams of brown rice and grilled tofu.
