Fat Smash Corn Salad

Ingredients
3 portobello mushrooms, chopped1/3 cup balsamic vinegar1/3 cup olive oil4 tsp. waterPinch of brown or white sugar1 can kernel sweet corn1 cup grape tomatoes, halved1 medium onion, chopped1/4 to 1/2 lb of bay lettuce(I used romaine)1 bell pepper, chopped1/2 cup chopped chivesSalt and pepper to taste
Directions
Marinate the mushrooms for 45 minutes in vinegar, olive oil, water and sugar.
While mushrooms marinate, mix corn, tomatoes, onion lettuce, pepper, chives, salt and pepper in a large bowl.
Drizzle the marinated mushrooms over the salad or keep to the side and dip
