Potato Kale and Turkey sausage soup

Ingredients
1 pound Italian turkey sausage1 T Olive oil1 medium onion diced1 clove garlic minced6 cup chicken stock2 cups water4 large white potatoes cubed3-4 cups chopped fresh kaleSalt and pepper to taste
Directions
Brown sausage in heavy bottomed pot and remove. Add olive oil to pot and sautee onions and garlic with a pinch of salt until soft. Add sausage back to pot with chicken stock and water. Add potatoes and simmer for 10 minutes. Add Kale and simmer for 10-15 minutes more depending on how wilted you want the kale.

Let sit for half an hour before serving if possible to allow the kale to absorb some of the broth and not be too bitter.
Makes 6-7 two cup servings.
