Garden Veggie Patties

Ingredients
1/4 c. chopped onion1/4 c. chopped green bell pepper2 cloves garlic, minced2 slices whole grain bread1/4 c. shredded zucchini1/2 c. shredded carrots1 c. firm tofu, mashed3 c. mashed potatoes1/4 c. parsley, minced1 tbsp. onion powder1/2 tsp rosemary1/2 tsp. sage1/2 tsp sea salt1/2 tsp. paprika
Directions
Lightly brown the onion, pepper and garlic in a non-stick skillet with little or no oil.

In a mixing bowl, crumble the bread into medium-fine crumbs; add the zucchini, carrots, tofu, potatoes, parsley, Vegenaise, and seasonings. Using a jar lid and ring, form into thin, 3 1/2" patties. Brown on both sides in a non-stick skillet or on a prepared baking sheet (spray with cooking spray or brush with lecithin), and bake at 350 degrees until browned. Makes 12 patties. Serving size: 1 patties
