Ingredients
2 tbs olive oil3 lb boneless, skinless chicken breast, diced1 large onion, chopped1 large green pepper, chopped3 tbs garlic, chopped2 c picante sauce2 c chicken broth1 can black beans, drained1 can corn, drained1 1/2 c rice, whole grain, dry
Directions
Heat oil. Cook chicken, onion, peppers and garlic. Add remaining ingredients. Cook until rice is done - approximately 20 minutes depending on type of rice. Yield 10 1-cup servings.
