Black Bean and Sweet Potato Salad, Tostada Topper, Quinoa Topper, Chip Dip, etc

Ingredients
1 Can Black Beans2 Sweet Potatoes1/2 Onion, chopped2 Peppers (bell peppers)1 Can Green Chilies (any level of spice is nice)2 Tbsp Olive Oil, for cooking onion, peppers, sweet potatoesAny Cheese, shredded for topping (3 oz extra-sharp white cheddar for whole recipe for nutritional value)Garlic, 2 clove, minced1-2 Cups Tomatoes, choppedCilantro, raw, 1 tbsp, mincedSalt, 2 dashLime juice, to taste
Directions
Prepare all ingredients, saute onions and peppers, then sweet potatoes (or: bake sweet potatoes, leave onions and peppers raw, whatever you like). Mix all ingredients in bowl, except cheese. Top with cheese and extra lime juice. Enjoy by itself or on top of tostadas, nachos, as a chip dip, on top of quinoa or rice, etc... Enjoy!
