Spiced Protein Applesauce Oatmeal Muffins

Ingredients
For Muffins:1/2 cup instant oats1/2 cup Light Soy Milk1/2 cup whole wheat flour1/4 cup dark brown sugar1/4 cup unsweetened applesauce1 egg white1/2 tsp. baking powder1/4 tsp. baking soda1/4 tsp. salt1/2 tsp. cinnamon1/2 tsp. almond extract1/2 tsp. nutmeg1/2 tsp. ground ginger1/4 tsp. ground cloves30g Soy Protein Powder (original or vanilla)Crumb Topping:2 tsp. dark brown sugar15g ground walnuts
Directions
Soak the oats in milk for about one hour.
Preheat the oven to 400 degrees.
Spray muffin pan with cooking spray.
Combine the oat mixture with the applesauce and egg whites, and mix until combined.
In a separate bowl measure and whisk the dry ingredients together.
Add wet ingredients to dry and mix until just combined.
Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
Combine the walnuts and brown sugar and top each muffin with some of the mixture.
Bake for 20-25 minutes or until done.
Remove from pan, cool and enjoy.
