Creole Rice Ring

3 cups instant brown rice uncooked1/2 Cup each chopped onion, celery, and bell pepper1 141/2 oz.can no salt added diced tomatos1/2 t. paprika1/4 t. salt1/4 t. hot sauce1/8 t. dried thyme, white, black, and red pepper1/2 cups water1-1/2 C. frozen peas cooked, optional not included in nutrition facts
1.Cook rice omitting fat and salt.
2.Coat skillet with no stick spray heat to medium until hot. Add veggies and saute til soft. about5 min.
3.Add spices, tomatos,water, and rice,reduce heat and cook uncovered 15 min. or until liquid is absorbed.
4. Pack rice mixture in a 6 cup ring moldcoated with cooking spray. Let sit 10 min.
5. Invert on platter, if desired fill center with peas.
12 servings about 1/2 cups.
