Garlic Eggplant with Marinara (pressure cooker)

Ingredients
1 Eggplant, peeled ( approx 4 cups cubed) (Don't peel if small,there are tons of antioxidants in the peel!)3 garlic cloves, minced1 Tablespoon Olive oil ( approx)1 Tablespoon Garlic PowderSalt & Pepper to taste.1 Cup of your favorite spaghetti/marinara sauceWater as needed for pressure cooker
Directions
I used one large, peeled eggplant.

Directions:
Sautee garlic in olive oil (you could probably skip this step all together and save the calories if you want), add all other ingredients to pressure cooker. Add water if needed, according to pressure cooker instructions. Stir. Close and bring up to pressure. Cook 6 to 8 minutes.Quick vent according to your model's instructions. Serve!

Makes 2 1-cup servings.

    Gawd, the eggplant turned to mush. Cut back on the time or you'll have eggplant soup. Also, if you're using fresh garlic, garlic powder isn't necessary. Maybe add onion powder if you want an additional flavor. - 3/26/17
