sweet potato hashbrowns

Ingredients
1/2 of large sweet potato or 1 small one, shredded.and 1/4 stick of oleo margarine
Directions
take sweet potato and shred it.
Place in a hot skillet with 2 tb spoon of oleo
then place 2tbsp on top of potato to melt down
turn when brown.

I found this to be good and more healthy.

    WONDERFUL! I used Smart Balance Butter for less calories. Great for a better fiber choice. I'm not sure the submitter of this recipe has the fiber number correct...think it should be higher. I didn't add it, but cinnamon might be a nice addition to this dish. - 3/7/08
