Cheese Blintz

Ingredients
1/4 c egg substitute1 1/4 c water1 tsp salt1 1/4 c white whole wheat flour3/4 c part-skim ricotta1/4 c plain yougart (I used fat-free)1/2 packet artificial sweetener
Directions
Make 8 blintzes

Combine eggs through flour and mix in blender or food processor. Blend until smooth. Should just coat a spoon. If needed, add a little more water.

Combine ricotta, yougart and sweetener and set aside.

Heat pan and coat with non-stick cooking spray. Pour 1/4 c batter onto pan and tilt to coat pan (you want the blintz as thin as possible). Cook until set, and flip over for a couple seconds on other side. Blintz should be set, but not brown or crisp.

Put about 1 T of filling on end of blintz and fold up burrito-style. If desired, top with 1 T of fruit spread/preserve of your choice.

    So amazed this worked! It made more than 8 pancakes for me - but that was fine since it took some practice. I added more sweetener and some lemon zest to the cheese and it was very yummy. Just using lemon yogurt might be easier next time. Thanks for posting! - 3/8/11
