Ingredients
Red Ripe Tomatoes, 18 medium whole (2-3/5" dia) (remove)Tomato Paste, 1 can (6 oz) (remove)Garlic, 4 clove (remove)Olive Oil, 4 tbsp (remove)Basil, 2 tbsp (remove)Thyme, ground, 1 tsp (remove)balsamic vinegar, 1 tablespoon (remove)Bay Leaf, 1 whole
Directions
blanch tomatoes in boiling water for about 2 minutes. Remove to a ice water bath to stop cooking.

Peel tomatoes and cut into quarters. remove seeds into bowl.


brown garlic in oil for about a minute. Dice tomatoes and add to pot. Strain seeds and juice into pot.
add thyme, basil and bay leaf and bring to boil. Reduce heat and simmer, covered, for about 1 hour. Add tomato paste and simmer for about 30-40 minutes.
