Minestrone Soup

Ingredients
1 Vegetable bouillon cube2 cups premium mixed veggies (carrots, potatoes, corn, green beans, celery, lima beans).5 cup Cannellini Beans.5 cup Dark Red Kidney beans4 oz Whole Grain Medium Shells
Directions
Makes 4 1-cup servings

1. Boil 2 cups of water in 2.5 qt sauce pan.

2. Add bouillon cube to rolling boil. Stir until it dissolves.

3. Empty mixed veggies and beans into colander. Rinse well. Add to water and continue to boil.

4. In a separate saucepan, bring 3 cups cold water to boil. Add pasta and boil for 5 minutes. Pasta will still be firm, but you don't want it to get mushy. If you intend on serving immediately, boil for another minute.

5. You may also add garlic salt and parsley to taste.

6. Revel in the deliciousness of this amazingly quick soup!

    Good recipe. I added mushrooms to mine - 8/28/13
