Veggie Morning Scramble

Ingredients
5 sprays of I Can't Believe It's Not Butter Spray or enough of another cooking spray to coat the pan10 g red onion, diced1 small white mushroom, sliced thinly3.1 oz firm tofu, cubed15 g broccoli slaw (you can use shredded or chopped broccoli also)15 g spinach, chopped finely1 large egg, scrambled2 tbsp feta cheese, crumbled
Directions
1. Heat spray in a small frying pan.
2. Saute onion, mushroom, tofu, and broccoli over medium high heat.
3. Add spinach and egg.
4. Sprinkle with feta.
5. Salt and pepper to taste.

Makes one serving of scramble.
