Forgiving Quiche

Ingredients
1/3 c. almonds, coarsely chopped1 c. flour1/2 c. whole wheat flour1 Tblsp. sugar1/2 tsp. salt1 1/2 tblsp. cold butter2-3 tblsp. olive oil6-7 tblsp. ice water1 c. chopped cooked chicken (optional)1 c. shredded cheese1/2 c. light cream1 1/2 c. milk
Directions
Preheat oven to 375 F

Blend almonds, butter, and flours in a blender or food processor; pour into a bowl and mix in sugar and salt; add olive oil and blend until incorporated. Add water one tblsp. at a time until a dough forms. Roll between two pieces of wax paper until you have a disc to fit a 9-inch pie pan. Fit crust into pan and place in fridge until ready to use.

Whisk together milk and eggs, add 1/2 tsp. salt and 1/4 tsp. of pepper. Remove crust from fridge; scatter cheese on the bottom, top with chicken, if desired, pour in egg/milk mixture and bake for 45 minutes to 1 hour until set.
