Mesir W'et - Spicy Ethiopian Lentil Stew

1T Vegetable Oilseveral cloves Garlic (6g)1 lg Onions, diced (192g)sprinkle of ground cloves1T red curry powder1t ground ginger1T paprikaa dash of freshly ground black pepper1T cayenne pepperdash of Salt2.5c water49g double-concentrated tomato paste1 cup Organic Red Lentils
1. Soak lentils for at least an hour in water
2. Drain and rinse and set aside
3. Saute onions and garlic in oil until golden
4. Add spices, bloom
5. Add water and tomato paste
6. When gently boiling, add lentils
7. Turn down heat and simmer until lentils are tender and it's a thick stew, adding more liquid if needed.
8. Toss in fresh diced tomato and lemon juice immediately before serving.
