Fruity Sesame Couscous Salad

Ingredients
2 cups cooked couscous3 tbsp sesame seeds1/4 cup Craisins 1/4 cup apricots, dried (about 6 halves)1/4 cup orange juice (about one orange)1 tsp grated ginger1/2 tsp sesame oil1 tsp olive oilsalt to taste (2 dashes for this recipe)
Directions
Cook couscous according to package directions. Fluff with a fork and cool to room temperature.

Mix orange juice, ginger, oils, and salt in a large bowl. Add 2 cups of cooled couscous, sesame seeds, craisins, and apricots. Mix well. Serve chilled.

Makes 4 servings.
