Turkey Quinoa Meatloaf

1 lb lean ground turkey1/3 cup quinoa, dry2/3 cup water, wet (hehee)1 tbspn olive oil1 large egg1 large onion, chopped(1-1.5 cups chopped)salt and pepper to taste1 8-oz can Hunts tomato sauce
Following box instructions, cook 1/3 cup (dry) Quinoa in 2/3 cup water.
Chop 1 large yellow or white onion(around 1 cup chopped).
Mix1 lb ground turkey, 1 can hunts tomato sauce(8oz), the chopped oninon, 1 large egg, 1 tbspn of olive oil and the cooked quinoa in a bowl. Pre heat oven 350-400 degrees. Shape meatlof in whatever type of pan you like and cook, uncovered for about an hour.

I made this for dinner and it was yummy.The list of ingredients failed to mention the tomato sauce, so be sure to put that in.It was really juicy so I just smoothed it down after I put it into the loaf pan.The only thing I did differently was to make it with extra lean ground beef. A winner! - 1/18/10
