SWISS CHARD BURGERS

2 cups fresh Swiss Chard, washed, steamed, chopped fine1/4 cup Onion, chopped very fine1/2 cup seasoned Breadcrumbs, ground1/4 cup grated Parmesan Cheese1 large Egg2 Whole Wheat Sandwich Rolls1 tablespoon Ketchup
MAKES 2 SANDWICH SERVINGS:
Wash and steam the Swiss Chard leaves. Cool and press out moisture. Chop fine.
In a heated non stick skillet over medium heat, add the olive oil, spread with spatula.
In a mixing bowl, quickly add the Swiss Chard, the finely chopped Onion, ground Breadcrumbs, grated Parmesan Cheese and one large whisked Egg. Mix throughly, and with clean hands, press 2 large Swiss Chard Burger Patties about 1/2 inch thick forming rounded edges. Place the patties directly into the non-stick skillet's hot oil, and cook 4 minutes on each side, or until golden brown.
Serve on Whole Wheat Sandwidh Rolls with a side dish Potato Oven Slices, a Salad, and Pickle.

These burgers were awesome and very easy to make. My family loves garlic and I tripled the recipe...added 4 cloves of minced garlic and used Stella brand shaved Parmesan cheese. They don't stay together real well so make patties on wax paper and then chill. My 15 year old ate 3...LOL!! Great meal ~ - 10/3/12
