Buffalo Tempeh, Open-Faced Sandwich

Ingredients
* Core ingredients:1 brick tempeh (Trader Joe's works well)1 small onion, sliced into rings4 slices bread (can double for a full sandwich, or remove to reduce calories* For Buffalo sauce:1 tbsp. Butter.5 cup Frank's RedHot4 tbsp white vinegar(adjust ratio of these three ingredients to alter taste of sauce)* Recommended condiments:4 tbsp Miracle Whipbread & butter pickle slices
Directions
Makes 4 servings. Warning: will produce smoke!

Sautee onions in skillet. Cut tempeh brick twice: first half the length, then half the thickness. Add tempeh to skillet when onions are almost done to toast for a minute or two. Add RedHot and white vinegar to make buffalo sauce. (Personalize your taste: experiment with proportions of butter to RedHot to vinegar.) Stir. Put tempeh and onions on a slice of bread. Optionally, put miracle whip/mayonnaise on bread under tempeh, and pickles on top.
