1 Pita, Whole Wheat, 4"1 Egg, Medium2 Egg Whites1/4th Tsp of Pepper1/4th Cup of 2% Mozzarella Cheese1 medium slice of bacon, raw1/4th cup of Tomatoes, chopped finely1 tbsp of chopped Shallots
Preheat oven to 350 Degrees.
Spray cooking pan with no-stick spray and place pita on top.
In a skillet, over medium heat, cook bacon to your liking.
When completed, add shallots and tomatoes to the pan until the begin to sizzle. Set aside.
Chop bacon into small pieces, mix with tomato and shallot mixture.
In a separate bowl, whisk together egg, egg whites, and pepper.
Pour tomato, shallot, and bacon into egg mixture, mixing evenly.
Pour on top of pita, making sure not to go over.
Sprinkle mozzarella cheese on top.
Bake for 15 minutes or until cheese is browning.
