Pasta w/Sun Dried Tomatoes, Olives, Herbs & Goat Cheese

8 0z. whole wheat smaller pasta (shells, penne)2 large garlic cloves1/2 cup chopped onion2 tbs. olive oil2/3 cup chopped sun-dried tomatoes1/2 c. vegtable broth1/3 cup minced fresh parsley2 tbs minced basil1/4 cup Kalamata olives3 ounces goat cheese
In small skillet, combine olive oil, garlic, onion, salt and pepper. Saute over medium low heat 3-5 minutes or until onion is soft. Add tomotoes & broth; simmer until liquid is reduced by about one third. Reduce heat and stir in parsley, basil, olives and salt & pepper; keep warm. Boil pasta in salted water until desired tenderness; remove pasta and drain most of cooking water, reserving 1/3 cup water in pot. In serving bowl whisk 3 ounces goat cheese with reserved (1/3 cup) cooking water until cheese is melted and mixture smooth. Add pasta and tomotoe mixture, toss well. Sprinkle w/additional goat cheese. Can add grilled chicken or shrimp. Can add pine nuts.
