Ingredients
6 eggsSmall Egg Substitute ContainerSalt and Pepper to taste8oz. Reduced Fat Cheddar or Colby Cheese (Shredded)2 red peppers, chopped1 bunch scallions, chopped10 oz pkg frozen, chopped spinach (thawed, rinsed and completely drained)1 pkg Hormel Peppered Bacon Pieces (optional)
Directions
Whisk eggs, egg substitute, salt and pepper together. Add the remain ingredients and combine. Bake in a 9x13 pan, greased with cooking spray and bake at 350F for 45-50 min. Cut into 12 squares. Each square is 1 serving.
