Dairy-free potato, ham, broccoli, cauliflower soup

Ingredients
1 2/3 lb yukon gold potatoeswater to cover1 small onion, chopped3 tbsp smart balance light buttery spread3 tbsp all purpose flourcrushed red pepper flakesground black pepper3 cups Silk Light Plain soy milk1 cup cubed cooked turkey ham1 cup chopped broccoli1 cup chopped cauliflower
Directions
Cut potatoes into 1 inch cubes. Bring water to boil in a large saucepan. Add potatoes and cook until tender. Drain, reserving liquid. Set aside potatoes. Measure 1 cup cooking liquid, adding water if needed, set aside.
Finely chop the onion. Melt the buttery spread in the saucepan over medium heat. Add onion to saucepan, cook, stirring frequently until onion is translucent and tender.
Add flour, season with pepper flakes and pepper to taste. Cook 3 to 4 minutes.
Gradually add potatoes, reserved liquid, and soy milk to onion mixture, stir well. Add ham, broccoli and cauliflower. Simmer over low heat 30 minutes, stirring frequently.
