*Needs a skillet that can go under the broiler6 eggs (Eggland's Best)14.75 oz cannned red salmon1/2 cup part skim ricotta cheese1 medium onion1 roma tomato2 Tbsp Canola oil2 Tbsp 1/3 less fat chive and onion cream cheeseFresh dill (optional)Lemon juice (optional)
Serves 8.
Chop onion and cook with the oil in a 12 inch skillet until nicely browned. Lower heat. Slice tomato into thin slices. Drain salmon and remove skin and bones. Sprinkle with lemon juice. Mix salmon, cheese and eggs and pour over onion. Cook until eggs just start to set. Place about 3 inches below the broiler and cook on high until fully set and just starting to brown. Don't walk away!! It only takes about 90 seconds to 3 minutes, depending on your oven. Spread cream cheese over fritatta while it's hot and sprinkle with fresh dill if desired.
