Rumbamel's Creamy Au Gratin Potatoes

-2 lbs. red potatoes thinly sliced-4 oz 1/3 less fat cream cheese-3/4 C fat free evaporated milk-2 small or 1 large cloves minced-1 t dried chives-1 t dried parsley-1/4 t black pepper-1/8 t salt-2 T grated parmesan-3/4 C fat free chicken broth like Aldi's Fit n Active-1 C 2 % milk mozzarella cheese shredded
--Wash then thinly slice the potatoes. Layer them in a lightly sprayed 9 x 13 glass casserole dish evenly.
--Pour the 3/4 chicken broth over the potatoes.
--In a medium sauce pan heat the cubed cream cheese, evaporated milk, garlic, spices and parmesan cheese. Stir over low/med heat until cream cheese is nice and creamy then pour evenly over the potatoes. Cover with foil and cook at 350 degrees for 45 minutes.
--Remove the foil, sprinkle the mozzarella cheese over the top and cook another 10-15 minutes or until potatoes are tender.
--Makes 10 servings.
