Spring Cabbage, Courgette & Pea Soup

Ingredients
1 Sweetheart or pointed cabbage (Savoy cabbage if not available)3 medium courgettes10 oz Organic frozen peas2-3 red onions3 tbs olive oilVegetable stock21/2 tbs Schwartz Korma Spice Blend
Directions
Makes approx 8-10 servings 100 cals each
Soften onions in olive oil. Add spice and fry gently. Stir in cabbage then courgettes a couple of minutes later. Add stock and simmer for 10 mins. Add peas and simmer 5 mins. Blend and serve.
