1 Pork Shoulder roast, 12 oz 3 cups of diced carrots1 cup of diced raw onions4 cups of white or red potatoes1 whole zucchini, chopped1 medium sweet potatoCut up the potatoes, onions, sweet potatoes, carrots, and zucchini and place them at the bottom of the slow cooker. Add the pork roast on top and add a 1/2 cup of water to the mix. Put the slow cooker on the low setting for 6 hours. Option to thicken into stew: at the end of the 6 hour cooking time, take out the meat and put it onto a plate. Mix a tablespoon of flour with a small glass of water and then pour into the veggies and broth. Mix all together. Add the slow cooker top back on and turn on high for 5 - 10 minutes. Ready to serve.
