Mom's Cheesecake

Crust:Keebler graham cracker crustFilling:2 packages Neufchatel Cheese1/2 cup sugar1/8 tsp salt1 tablespoon flour1/2 teaspoon vanilla extract2 eggs1/2 cup light sour creamTopping:1 can cherry pie filling (separate out the cherries from the syrup)1/2 cup light sour cream
Crust:
You can make your own graham cracker crust, or just use a premade one from Keebler.
Let the cream cheese sit out to soften.
Beat it and add the other ingredients. Add the sugar slowly and then add the eggs at the end, one at a time.
Bake for 45 min - 1 hour at 350.
Cool for 1 hour on rack.
Cool for 3 hours in refrigerator.
Topping:
Combine 1/2 cup light sour cream with 1/2 cup cherry pie filling syrup. Spread over the cheesecake. Place cherries (without any sour cream) in a circular pattern, or just heap them up in the middle of the cheesecake.

This was probably the best cheesecake I've ever had that wasn't super sweet. It was also the first one I've made myself. I couldn't give 5 stars because I didn't use the topping, and I added 1/2 tsp lemon juice and an extra 1/2 tsp vanilla (with another 1/2 tbs flour). Overall, tasted GREAT! Thanks - 8/20/11

My 14 year old daughter made this for our New Year's eve party and it turned out wonderful. I will have to remember next time to add a pan with water under the cake pan to keep it from cracking - but it was delicious! She said "Mom if this is so easy to make why don't we make it all the time" LOL - 1/4/10
