Japanese Soba Noodle Soup

Ingredients
* Mushrooms, fresh, 4 oz * Onions, raw, 0.5 medium (2-1/2" dia) * Garlic, 3 cloves * Ginger Root, 3 tsp * *Hoisin Sauce, 1 tbsp * Chicken Broth or Bouillon, 1 cup (8 fl oz) * *Chili, Hot Oil srv= 1 tsp., 2 serving * Water, tap, 4 cup (8 fl oz) * Japanese Noodles, Soba, 4 oz * Sesame Oil, 1 1tsp
Directions
Although I used chicken broth, this can certainly be made with vegetable broth.

Cook the soba noodles in a separate pot of water.

Saute mushrooms, onions, garlic, ginger with 2 tsp of hot chili oil. Add broth and water for soup and let come to a boil. Since I didn't have soy sauce, I substituted for hoisin sauce, but at this point you can add soy or hoisin and the sesame oil. Add the cooked noodles and cook soup with noodles some more.
